I didn’t think I liked Brussels sprouts—until I went to dinner with my daughter and she ordered a plate of roasted Brussels sprouts with bacon. To my surprise, I couldn’t stop eating them! The crispy edges, the smoky bacon, the simple seasoning—it all just worked. Now, One Pan Roasted Brussels Sprouts with Bacon is a dish I make all the time. It’s easy, packed with flavor, and has totally changed the way I think about this veggie.

Roasting brings out their natural sweetness, and when you add crispy bacon and a little garlic? Total game changer. It’s a one-pan delight that comes together fast and disappears even faster—perfect for weeknights or holidays.

Are roasted Brussels sprouts healthy?

Yes! Roasted Brussels sprouts are low in calories and packed with fiber, vitamin C, and antioxidants. Adding bacon does increase fat and sodium, but in moderation, it adds flavor and can still be part of a balanced meal.

Why didn’t my roasted Brussels sprouts come out crispy?

They likely didn’t get crispy because the pan was overcrowded or the oven wasn’t hot enough. For the crispiest sprouts, make sure to:

  • Spread them out in a single layer with space between each one.

  • Place them cut-side down on the pan.

  • Roast at a high temperature—400°F to 425°F works best.

  • Skip excess moisture—dry them well after washing.

Tips for best results:

  • Don’t overcrowd the pan—use two sheets if needed so the sprouts roast, not steam.
