This traditional Italian stuffed artichoke recipe is a cherished family tradition that began with my grandmother and has been passed down through generations. Every holiday, my sisters would “volunteer” me to make them — a role I’ve happily taken on over the years. These stuffed artichokes are always the first dish to disappear from the table and a must-have for family gatherings and holidays.
These artichokes are stuffed with breadcrumbs, garlic and lots of grated cheese. As you eat your way to the “heart” of the artichoke the leaves will get meatier. When you finally reach the heart it’s like you hit gold!! I always save some of the breadcrumbs that fall off the leaves and put those breadcrumbs onto the heart, oh it’s soo good!

How to eat Simple Italian Stuffed Artichokes
To eat an artichoke, you will not need a fork or spoon. Your hands will be your utensil! Make sure to grab a few napkins before you start eating along with an empty plate for the leaves.
Begin by removing an outer leaf. Use your teeth to scrape off the “meat” from the artichoke leaf. The meat is on the bottom of the leaf. As you work your way to the middle of the artichoke the leaves will get softer, meaning they will have more meat.
Once you get down to the bottom there will be small pinchy leaves, this is the hairy “choke” on top of the heart. Do not eat these! Carefully remove them from the top of the heart and throw them away. Now you are at the best part, the heart of the artichoke. I usually put some breadcrumbs on top that have fallen off from other leaves, now eat and enjoy! YUM
How to pick a good artichoke
During the holiday season artichokes are easy to find. Look for a firm, heavy, bright green artichoke with little to no brown on the leaves. The leaves should be tightly packed. Some leaves can even have a purple undertone. When you squeeze an artichoke that is fresh it should give a little squeak. If the artichoke feels mushy when squeezed it has passed its peak. Do not purchase an artichoke that has either brown, loose or split leaves or if the artichoke feels spongy.

Main Ingredients Needed:
- Large artichokes – The star of the dish! Their tender leaves and heart create a natural “cup” to hold the flavorful breadcrumb mixture.
- Garlic – Adds that classic Italian aroma and deep savory flavor that seasons both the stuffing and the artichoke as it steams.
- Fresh parsley – Brings brightness and a touch of freshness.
- Dried oregano – Adds a warm, earthy Italian flavor that ties the dish together.
- Seasoned breadcrumbs – Create the hearty, flavorful stuffing that fills each leaf, soaking up the olive oil and seasoning.
- Extra virgin olive oil – Helps the breadcrumbs toast golden and adds richness to every bite. It also keeps the artichokes moist while cooking.
- Grated cheese – Adds a salty, nutty flavor (often Parmesan or Romano) that melts into the breadcrumb mixture for extra depth.
- Salt – Used to season the boiling water, helping to flavor the artichokes as they cook and keep their color vibrant.

Step by Step Directions:
1 – Rinse the artichokes under cold water. Using a sharp knife, trim about one inch off the top of each artichoke. Cut off the stem at the base of the artichoke. With a kitchen shears, trim the pointy tips off the remaining leaves.

2 – With your hands, pull open the leaves to make room for the stuffing. To loosen up the leaves, press the artichoke firmly down on the counter. This will make it easier to separate the leaves.

3 – In a small bowl add the breadcrumbs, grated cheese, garlic, parsley and oregano. Stir to combine. Pour in the olive oil and mix together. The breadcrumbs, should be moist.

4 – Using your hands pull apart the leaves, you can use either a small spoon or your hands to add the filling in between the leaves. Start by filling the center and working outwards. Continue with the rest of the artichokes.
5 – Place stuffed artichokes in a large pot where they can stand up tightly. Pour water into the pot reaching 1/2 up the artichoke (pour into the side of the pot, not over the artichokes). Place a teaspoon of salt into the water.
6 – Drizzle the top of the artichokes with olive oil. Bring water to a low boil, cover and cook on low for 50 minutes or until leaves pull off easily. Make sure to check the water does not evaporate, add more water when needed.

1/2 teaspoon of dried oregano
1–1/2 cups of seasoned breadcrumbs
1/2 cup of extra virgin olive oil
1/2 cup of grated cheese
1 tsp salt for water
Instructions
Step by step instructions for Italian stuffed artichokes
1. Start by slicing off the stem of the artichokes so the can stand flat.
2. Lay the artichoke on its side, and while holding it firmly, cut off about 1 inch from the top.
3. With kitchen scissors, trim off the remaining pointy leaf tips, be careful, the tips can be sharp.
4. Pull off and discard any small leaves from the bottom of the artichoke
5. In a small bowl, mix together two cups of seasoned breadcrumbs, garlic, grated Pecorino Romano cheese, oregano, and chopped parsley. Add olive oil and mix until the stuffing is moist but not too wet.
6. Before stuffing the artichoke, spread the leaves apart with your hands. To make it easier, turn the artichoke upside down and firmly press down to help flatten them out. Give it a gentle bang on the counter if needed.

8. Place the stuffed artichokes into a large saucepan or Dutch oven. Add enough water to cover the artichokes halfway. Add a tablespoon of salt to the water.
9. Drizzle top of artichokes with extra virgin olive oil. Cover the pan and cook for 50 minutes or until leaves are soft. Make sure water does not evaporate, if needed add more water.
You can check if they are done by pulling a leaf off, if it comes off easily they are done. If not cook for an additional 15 minutes. To get top crispy put into the oven on broil just until crispy, 3 to 4 minutes.
