Broccoli Cheddar Twice Baked Potatoes

Broccoli Cheddar Twice Baked Potatoes take me back to when I used to order this at Wendy’s years ago. Back then, I thought it was one of the healthier fast-food choices. Now I make them at home so I know exactly what’s going in each bite—and I’ve learned how easy it is to make them even more flavorful.

two twice baked broccoli and cheddar potatos

These twice baked potatoes are loaded with fluffy mashed potatoes, tender broccoli, and plenty of melty cheddar cheese. Perfect as a hearty side dish or a meatless dinner, they’re creamy, cheesy, and always a crowd-pleaser.

These are a perfect addition to your holiday table alongside my Stuffed Artichokes, or Roasted Sweet Potatoes with Cinnamon and Honey.

What is the difference between baked and twice baked potatoes?

Baked Potato: Cooked whole until soft inside and crisp outside, usually served plain or with simple toppings.

Twice Baked Potato: Baked once, scooped out, mixed with ingredients like cheese, broccoli, or butter, then baked again for a creamy, flavorful, loaded potato.

Can you make twice baked potatoes ahead of time?

Yes! You can make twice baked potatoes ahead of time. Here’s how:

Prepare completely: Bake, scoop, mix, and refill the potatoes as usual.

Refrigerate: Cover tightly with foil or plastic wrap and store in the fridge for up to 24 hours.

Bake when ready: Bake at 350°F for 20–25 minutes, or until heated through and the cheese is melted.

Make it Your Way:

  • Add bacon crumbles or diced ham.

  • Use different cheeses (Gruyère, Monterey Jack, smoked gouda).

  • Swap broccoli for spinach, roasted cauliflower, or caramelized onions.

  • Make it spicy with jalapeños or hot sauce.
